Maple Cheesecake

Crust:
4 tablespoons of butter (melted)
9 gram crackers (1 sleeve)
1/4 cup of maple sugar

Custard:
4 Large eggs
1/3 cup of heavy cream
1-1/3 cups of maple sugar
3-8oz packages of cream cheese


Mix crust ingredients and press in a 9" springform pan.
Mix custard ingredients and place on the crust.
Place in a preheated oven set to 350 degree F for 40 minutes.
Remove from heat, cut around sides and refrigerate overnight.

The secret to this recipe is the concentrated maple flavor in our maple sugar.  The maple sugar is made with mid and late season maple syrup which contains the best flavor.  Most maple sugar is made with early season maple syrup which is tasteless but is easy for large factories to convert to sugar.
